I had a student who was a sous chef in a top London restaurant. He told me to never eat from a buffet as you don't know how long the food has been sitting there or how many times it has been re-heated or, if it is salad, refrigerated. He also said that kitchens in expensive restaurants were not necessarily any cleaner than greasy spoons caffs.
